Delicious food and lots of fun

The kids spent a lovely fall day searching for acorns, and mama cooked and baked.


Baked Potato Soup
One of our fall favorites

4 Large baked potatoes
2/3 cup butter
2/3 cup flour
6 cups milk
2 tsp. salt
4 green onions, chopped and divided
12 slices bacon, cooked, crumbled, divided
1 1/4 cups cheese, grated, divided
1 8oz. carton sour cream

Cut potatoes in half, scoop out pulp, set aside. Melt butter in saucepan over low heat. Add flour, stirring until smooth. Cook 1 min., stirring constantly. Add milk. Cook over med. heat, stirring constantly until thick and bubbly. This takes a long time.
Add potato pulp, salt, 2 tbsp. green onions, 1/2 cup bacon, 1 cup cheese. Cook until cheese is melted and soup is heated. Stir in sour cream. Serve with remaining green onions, bacon and cheese on top.

I always serve this with homemade crusty french bread! It is delicious hot out of the oven, dipping in the soup.

Very filling meal, very delicious.

For dessert I made chocolate chip cake bars. We definitely didn't need them, we were so stuffed from the soup!

1 pkg. yellow cake mix
2 eggs
1/4 cup brown sugar
1/4 cup butter, melted
1/4 cup water
2 cups chocolate chips, divided
1 tbsp. shortening

Combine first five ingredients, beat for 2 min. Stir in 1 1/2 cups chocolate chips. Spread in greased 13 by 9 casserole dish. Bake at 375 for 20-25 min. Cool. Melt shortening with remaining chocolate chips, drizzle over top.

These bars disappeared very quickly!
